1. How much ground coffee should I use for each cup I am brewing??
We recommend a heaping tablespoon of coffee per 8 ounces of water. This
will give the best tasting coffee. Anything less than this will produce a weaker
coffee which will not have the full flavor and aroma that is intended.

2. I notice that you don’t roast all your coffees as medium and dark,
how come?

We cup each new shipment of beans as they arrive. This allows us to determine
which roast brings out the best flavor and taste for each bean. Some beans actually
roast well at a couple of different levels, which is why sometimes you see them in
more than one category.

3. What do you mean when you say, “We cup each new shipment”??

“Cupping” is the traditional way of tasting the roasted coffee to determine what temperature and
how far into the roast each type of bean needs to go. As the beans are roasted samples are
taken at appropriate times and notes are made as to the time and temperature
at which each sample was taken. Then the samples are ground, hot water is added and each sample
is prepared for tasting, or “cupping”.
