We often have friends who want a “dark roast” or a “medium roast”. At Covenant Roasters we cup each new batch of beans, and determine the point in the roast that produces the best test for that bean.

Our experience shows that Rwandan and the Mexican are better when roasted dark. The other coffees are better when roasted as a medium roast.
